The Blanc de Blancs champagnes are a category apart in the sparkling universe of champagne. Made exclusively from white grape varieties (mainly Chardonnay), these sparkling wines are characterized by floral and pastry notes and a great finesse. They are champagnes for aperitif or beginning of the meal.
In Champagne, there are 3 main grape varieties, 1 white, Chardonnay, and 2 blacks, Pinot Noir and Pinot Meunier. The Champagne winemaking technique allows to obtain a white wine from white grape varieties or black grape varieties. However, if the producer uses only white grape varieties, then we can speak of Blanc de Blancs champagne. And conversely, we will speak of Blanc de Noirs champagne when only black grape varieties are used.
There are many nuances in the family of Blanc de Blancs champagnes. These are generally cuvées that offer a lot of finesse and delicacy. On the nose, one discovers notes of white flowers, a touch of white fruits, and in a second time, pastry or sweet spice notes (vanilla).
In the mouth, these are champagnes with a very delicate texture. In the mid-palate, one discovers their freshness and minerality. One finds notes of white fruits, chalk, and sometimes even more gourmet nuances.
Blanc de Blancs champagnes are produced almost everywhere in Champagne, but the most reputed area for its Blanc de Blancs champagnes is the Côte des Blancs, near Epernay. But the singularity of a terroir offers very different Blanc de Blancs. They will be more expressive and ample along the Marne Valley, and more tense in Mesnil sur Oger, while in the Aube, the Kimmeridgian soils will give very mineral cuvées.
Blanc de Blancs champagnes are mainly aperitif cuvées. Their freshness and tension make them the perfect wine to open the palate before a meal. However, one can imagine interesting pairings with certain dishes, such as seafood, fish or cheese.
