Offer a fine selection of winegrower's champagne


I've touched on the issue of supply here before, but this fundamental question is well worth a new post. Originally, the concept of Plus de Bulles was simple: to offer a fine selection of winegrower's champagne, champagnes with unbeatable value for money compared to vintages from great houses, but with a large deficit of notoriety.

This is how the site was born, with around fifty cuvées from producers located in the Marne. But quickly I realized that the mayonnaise was not setting. Not that there was no demand for these champagnes, but customers need to be reassured, and in the absence of a surety (sommelier like Patrick Borras for example) capable of validating the quality of the cuvées offered, I quickly felt that the presence of big houses (Roederer, Veuve Clicquot, Bollinger…) could (in part) fill this gap. And then more pragmatically, Google queries on the names of the winemakers on Plus de Bulles are marginal, in any case far from the volume of visits that brands like Moët & Chandon or Pommery can generate.


A wide selection of champagnes from great houses

So I quickly decided to enrich my range with a wide selection of champagnes from great houses. But who says mass products (well everything is relative, we are still talking about champagne), says exacerbated competition on prices and therefore reduced margins. I have therefore developed, in parallel with this "big houses" offer, a range of houses known in the circle of champagne lovers such as Jacquesson champagne or the Billecart-Salmon house, houses less present on the Net. I have also decided to maximize the value of the winegrowers' champagnes with specific emphasis and the support of Chef-Sommelier Patrick Borras. This work has made it possible to (roughly) balance sales between these three segments and to preserve the margin.
