Bellini: first champagne cocktail

C’est en 1948 que Giuseppe Cipriani, le patron-barman du Harry’s Bar de Venise (Italie), décide d’inventer le cocktail à bulles ! Ce dernier fait toujours office de référence, et se nomme le Bellini.
This champagne cocktail is a tasty blend of fresh peach nectar, cane sugar syrup and champagne.
The ingredients of my personal Bellini recipe
Champagne (Brut preferably, but a dry rosé champagne will be excellent too)
4 cl Peach nectar
1 cl lemon juice
A few drops of cane sugar
Take a glass of champagne that you fill halfway with champagne. In a shaker, combine the cane sugar, lemon and peach nectar. Shake according to the lightness you want to achieve. Carefully pour the mixture into the glass, filling to the brim. Stir very gently so as not to break the champagne bubbles. For decoration, you can cut a slice of peach and lemon that you hang on the rim of the glass. For tasting, the champagne must be very fresh, so consider a champagne bucket.
