An incredible cuvée that stands on its own, but which could also accompany warm oysters and Aquitaine caviar, or a great Parma ham, a great Ibérico, and a heart of thirty-six-month Parmesan.
Salon 1999 is the 37th and last vintage of the 20th century produced by this legendary house.
In 100 harvests, Salon will have decided to produce only 37 vintages, and only 37 years will have lived up to the high standards of Salon champagne.
37 vintages with the same common roots: a single terroir, that of Mesnil-sur-Oger, a single grape variety, Chardonnay, and always a single year. But 37 different vintages, each with its own uniqueness.
Salon 1999 is still a young vintage, a vintage in the making, a powerful, deep and complex vintage. A vintage of devilish charm.
Salon 1999 has a pale gold color with slightly green highlights.
The nose is lively but still discreet, with notes of white flowers and white fruit.
On the palate, the attack is clean, followed by a clean, firm, structured wine. A cuvée with creamy bubbles and aromas of brioche, bread, white flowers, white fruit and bitter almond.
The finish is extremely long and crystalline, with a touch of citrus.
