Salon champagne was born in 1901 from the hands of Aimé Salon, who wanted a champagne to his taste, for his own consumption and that of his friends. This champagne is made from a single grape variety, Chardonnay, from a single cru, Le Mesnil-sur-Oger, and from a single vintage! It is crafted without any blending and without malolactic fermentation to preserve strong acidity and enhance aging. The wines are aged for an average of ten years before revealing the distinctive flavor of Le Mesnil Chardonnay, a blend of ripe grapes and fresh chalk. Salon champagne is the noblest expression of the Côte des Blancs. A vintage is only produced if the quality is deemed perfect.
