Champagne Salon was created in 1901 by Aimé Salon who wanted to make a champagne to suit his own taste, for drinking with his friends.
Made from a single grape variety, Chardonnay, one terroir, Mesnil-sur-Oger and one single vintage, it is the most noble expression of the côte des Blancs.
Unblended and made without malolactic fermentation, its good acidic levels enable it to be matured for an average of 10 years to allow the typical chalky and ripe fruit aromas of Chardonnay from Mesnil to develop, with the potential for laying down for many more years.
A vintage is only produced if its quality is considered perfect. Only 36 vintages have been produced since the appearance of the first one in 1920.
