The Making of Pommery Brut Royal Champagne

The Pommery Brut Royal is made from a blend of Chardonnay (which dominates the cuvée), Pinot Noir, and Pinot Meunier. The grapes come from 40 iconic villages in the Champagne region, located particularly on the Côte des Blancs and the Montagne de Reims. These unique terroirs give this cuvée its vivacity, delicacy, and unique character.

Each year, the cellar master, Clément Pierlot, blends these different crus to recreate the reference cuvée of Pommery champagne. The vinification is carried out in accordance with Champagne tradition, with the first fermentation maintained at a low temperature (16°C) to preserve the freshness of the aromas. Once bottled, the Brut Royal is taken down to the chalk cellars located under the Pommery estate, at a depth of 30 meters, where it undergoes a slow mousse formation, ensuring fine and elegant bubbles. The dosage is carefully adjusted to maintain the harmony and finesse of the aromas.
