Champagne Jestin is a young house founded in 2006 by Hervé Jestin, a pioneer and world-renowned expert in organic and biodynamic viticulture.
This Vintage 2009 is Jestin's fourth vintage. It is a blend of 25% Pinot Meunier from Cumières, Domaine George Laval, 50% Chardonnay from Trépail, Domaine David Léclapart, and 25% Pinot Noir from Bouzy, Domaine Benoît Lahaye. Grapes harvested on fruit days. A unique supply, probably the best in organic viticulture in Champagne.
With these extraordinary grapes, Hervé Jestin has created a cuvée of remarkable precision. Fermented and aged in French oak barrels from the Allier region. Malolactic fermentation takes place during the 10-month ageing period on lees.
In July 2010, after flowering and the summer solstice, the wine is bottled.
All stages in the cultivation of the vines and the vinification of this Champagne respect the natural cycles of nature and the main influences of the planets in the solar system.
The inner planets of the solar system have a strong influence on alcoholic fermentation, while from March onwards, the outer planets influence malolactic fermentation.
All my work as a winemaker involves learning to listen to the wine, to work with the intelligence and awareness of nature.
For me, it's a matter of entering into resonance with my wine, so as to be able to provide it with the natural elements it needs to evolve, when it needs them. This may involve, for example, coming into contact with daylight or the morning air at certain times of the year (such as the solstice or equinox), or bringing in the energy of a plant or mineral.
My Champagnes are wines of great complexity and emotional richness. It is sometimes necessary to wait several minutes for them to express all their qualities. The choice of glass is important, and I prefer to use a Champagne or wine glass (Jamesse, Riedel or Lehman).
These Champagnes are also gastronomic Champagnes, Champagnes for sharing.
