The Vintage 2008 of Hervé Jestin Champagne is the result of a blend combining 50% Chardonnay from Trépail, 25% Pinot Meunier from the terroir of Cumières, and 25% Pinot Noir grown in Bouzy. These grapes come from exceptional domains committed to rigorous organic viticulture: David Léclapart, Georges Laval, and Benoît Lahaye. Harvested on fruit days, these grapes embody the excellence and purity of the great Champagne terroirs.
Hervé Jestin applies a vinification process based on biodynamic practices. Each grape variety is fermented and aged separately in French oak barrels from Allier for 10 months. During this period, malolactic fermentations are carefully conducted, influenced by natural rhythms and lunar cycles. Once the aging is complete, the wine is bottled in July, after the blooming and summer solstice, a key step to ensure harmony and aromatic depth.
The Vintage 2008 cuvée presents a luminous golden hue, traversed by fine and persistent effervescence.
On the nose, this champagne reveals great complexity with aromas of dried fruits, candied citrus, honey, and toasted notes. Mineral and floral notes complement this refined bouquet.
On the palate, the attack is lively and precise, carried by a beautiful mineral tension. The mid-palate reveals a silky texture, balanced by flavors of yellow fruits, brioche, and a salty touch. The finish is long and elegant, marked by chalky notes and persistent freshness.

To preserve all the richness of the Vintage 2008, it is recommended to store the bottles horizontally in a dark and cool cellar, at a constant temperature of 10 to 12°C. This champagne has an impressive aging potential, capable of favorable evolution for another 15 years.

All the steps of vine cultivation and vinification of this Champagne respect the natural cycles of nature and the main influences of the planets in the solar system.
Thus, the inner planets of the solar system have a very strong influence on alcoholic fermentations, while from March onwards, it is the outer planets that act on malolactic fermentation.
All my work as a winemaker will consist of learning to listen to the wine, to work with the intelligence and consciousness of nature.
For me, it is about entering into resonance with my wine to be able to bring it, at the moment it needs it, the natural elements necessary for its evolution. This can involve, for example, exposure to daylight or morning air at certain times of the year (solstice or equinox, in particular) or the energy input from a plant or a mineral.
My Champagnes are wines of great complexity and emotional richness. Sometimes it is necessary to wait several minutes for them to express all their qualities. The choice of glass is important; I prefer to use a Champagne or wine glass (Jamesse, Riedel, or Lehman).
These Champagnes are also gastronomic Champagnes; they are Champagnes for sharing.
