Jean-Pierre Vazart's Cuvée Brut Zéro is an exceptionally generous, delicate, non-dosed champagne.
The blend consists exclusively of Chardonnays from the vineyards of Chouilly, a village classified as a Grand Cru in the Côte des Blancs. The vines are over 40 years old and planted on chalky subsoil, giving this wine intensity, body and elegance.
This Blanc de Blancs is made up of harvests from 2013 (65%), 2012 (5%), 2011 (5%) and wines from a Réserve Perpétuelle started in 1982 (25%). This cuvée is vinified in stainless steel tanks, and Vazart-Coquart carries out malolactic fermentation to give the wine a touch of roundness.
Brut Zéro has a beautiful golden-yellow color and fine, delicate effervescence.
The nose is generous, first expressing notes of white and yellow-fleshed fruit, then revealing great depth with hints of fresh aromatic herbs such as coriander, eucalyptus, thyme and laurel. It then opens with hints of wood, butter, brioche and spice.
On the palate, the texture is fine, revealing aromas that evoke the oily character of dried fruit, and the finish is orange and acidulous.
This Brut Zéro Champagne is a perfect match for vegetable risotto, tuna takaki with sesame and coriander, or fish blanquette.
