Millésime 2007 from the house of Ruinart is quite unique, born of a vintage that was totally out of the ordinary, suffused with sun. It’s a finely structured champagne brimming with aromas of white fruits.
The 2007 grape harvest was precocious, commencing in August following an unusually hot spring. Grape quality was perfect, but the quantity was much restrained.
Ruinart Millésime 2007 is a blend of 55% Pinot Noir and 45% Chardonnay selected across the Grand Cru and Premier Cru terroirs of the Côte des Blancs and the Montagne de Reims, some of the best parcels in all of Champagne. This vintage champagne is dosed at 7g/L to flatter the development of its aromas.
Millésime 2007 is intensely gold in colour, with slight greenish gleams.
The nose evolves in a register of white-fleshed fruit such as pear and apple, but also with an agreeable touch of salinity and a hint of tea, with patisseries and citrus notes appearing after airing.
The palate reveals complexity, structure, fullness and vivacity with an echo of the saline notes underpinning white and yellow fruit aromas.
This is a champagne of immense complexity and intensity which will perfectly accompany a cocktail aperitif or the first courses of a formal meal.
