Roederer's 2007 Vintage expresses warm, intense fruity notes, supported by a silky mouthfeel.
2007 was marked by a hot spring and cool summer, which led to a fairly early harvest, starting at the end of August. The relative dryness at the end of the summer enabled a fine end to the ripening process.
This champagne is made from a majority of Pinot Noir (70%), with a further 30% of Chardonnay. Vinified in oak foudres, this champagne benefits from 4 years of maturation in cellars and a 6-month rest period after disgorgement to perfect its maturity.
The dosage is average, at 9g/l, in order to sublimate this Vintage.
Roederer Vintage 2007 has a golden color with coppery highlights, and numerous fine bubbles.
The nose reveals rich notes of pear, raspberry and dried fruit. On the second nose, nuances of cocoa emerge, along with aromas of Viennese pastries and vanilla.
On the palate, the attack is intense and sharp. The wine is carried by fruity notes and a silky, caressing texture.
An elegant woody presence, subtle and controlled, reinforces the lightly toasted, vanilla flavors without dominating the Pinot Noir fruit, which remains the backbone of this blend.
