Only a dozen different crus, classified as Grands Crus or Premiers Crus, are used in the 2004 cuvée. Pinot Noir, the House's historic grape variety, makes up the majority of the blend (70%). Most of these grapes come from the Montagne de Reims, from villages such as Verzy, Verzenay and Mailly, bringing power and richness. Bouzy and Ambonnay provide red fruit aromas. Other Pinots Noirs complete the blend, in particular those from Avenay in the Marne Valley and Aÿ. The structure of the Pinots Noirs is matched by the elegance and finesse of the noble Chardonnays from Avize and Cramant (30%). This wine will be aged for nearly five years in the Maison's cellars, with a deliberately low dosage of 6 g/l cane sugar, allowing it to express itself fully.
