Over the years, Cuvée Abyss has become one of Champagne's most emblematic cuvées. Immersed for 1 year in the seabed off the eastern coast of the Île d'Ouessant, Cuvée Abyss is an adventure.
Leclerc Briant came up with the idea of immersing a cuvée specially developed for this purpose, following the discovery in the Baltic Sea of a cargo of champagne that had spent more than 170 years underwater.
In association with Amphoris, a company specializing in underwater exploitation, the house and its cellar master Hervé Jestin have imagined a made-to-measure cuvée.
Hervé Jestin, the house's cellar master, has chosen terroirs renowned for their limestone subsoil to forge a link with the marine subsoil of the Bay of Stiff, at the eastern tip of the Isle of Ushant.
He has selected Chardonnays from the Bisseuil terroir, Pinot Noirs from Avenay-Val-d'Or and Pinot Meuniers from Vrigny. Each grape variety is equally represented.
Cuvée Abyss 2015 was submerged in March 2019, to be brought to the surface in May 2020.
Cuvée Abyss 2015 Leclerc Briant has a luminous golden color. Its bubbles are fine and lively.
On the nose, mineral notes emerge, with a hint of iodine. In the background, there's a nice fruity presence. On the second nose, notes of citrus, fresh grape, pomelo, almond, blackcurrant and blueberry emerge. Delicate aeration of the glass reveals elegant iodine notes.
On the palate, after a lively attack, underlined by a creamy, melted bubble, Cuvée Abyss reveals lovely fruity notes, evoking citrus fruits in particular. The mid-palate is more mineral and saline. Finally, the finish recalls the limestone notes of the Champagne terroir, with its iodine signature.
Abyss 2015 will go wonderfully well with iodized dishes such as Atlantic oysters, raw salmon or sesame tuna tataki.
