Clos de Cumières 2013 is crafted from two iconic grape varieties: Pinot Noir and Chardonnay. Sourced from Hervé Jestin's personal vineyards in the terroir of Cumières, these grapes benefit from meticulous care and a deep respect for natural cycles. Each step, from vine to cellar, is guided by a philosophy deeply connected to the rhythms of nature and planetary influences.
Alcoholic fermentations are guided by the inner planets of the solar system, while the outer planets influence malolactic fermentations starting in March. This work, carried out with attentive listening to the wine, allows for the accompaniment of each stage of its evolution. Clos de Cumières 2013 is thus the fruit of a perfect symbiosis between human intelligence and natural forces.
This cuvée is vinified and aged in stainless steel vats. The bottles then age in the house's cellars, where they develop a silky texture and remarkable aromatic depth.
