Cuvée Tue Bœuf 2014 from Maison Janisson-Baradon is an elegant, expressive Blanc de Noirs. It's a champagne that's perfect with cocktails, but also with refined dishes.
This cuvée is made from Pinot Noir grapes from a single parcel of "Tue Boeuf" vines located on the western slopes of Epernay in the Marne Valley. The soil of clay and silt and the chalk subsoil give the grapes a frank, generous character.
One third of this champagne was vinified in clay cement eggs, which allows the wine to work without the oxidative side of the barrel, and two thirds in small oak barrels. Malolactic fermentation was blocked to preserve maximum freshness.
After bottling on August 31, 2021, the bottles will be aged for a further 6 years in the company's own cellars, before being disgorged and dosed as Extra Brut at 2 g/L.
Cuvée Tue Bœuf 2014 has been confidentially produced in 2720 bottles.
