Cuvée Dame Jane from Henri Giraud is a generous, gourmet rosé champagne. This atypical cuvée is vinified and aged in terracotta amphora.
Cuvée Dame Jane is made from south-facing Pinots Noirs grown on the Grand Cru terroir of Aÿ. It is the fruit of a long journey for Henri Giraud.
Disappointed by the expression of his Pinots Noirs d'Aÿ after ageing in vats, Claude Giraud and cellar master Sébastien Le Golvet set out to find the best container in which to vinify these grapes. After experimenting with terracotta eggs, which brought a real richness to the wine, but also a certain oxidation, due to the porosity of terracotta, the house turned to stoneware amphorae. As sandstone is an inert material, this made it possible to reconcile vinification in an amphora, a shape that allows the lees to be constantly re-suspended, with the preservation of the wine's freshness.
Cuvée Dame Jane is a rosé champagne with lovely red fruit aromas (strawberry, raspberry) and a fresh attack with good tension.
Cuvée Dame Jane possesses great elegance and purity. A gourmet champagne that will resonate well with gourmet dishes.
