Goutorbe Bouillot's Cuvée Noir Coteaux is a champagne of great class. Its aromatic richness and roundness open the door to fine gastronomic pairings.
A blend of Pinot Noir (80%) and Chardonnay (20%), this cuvée underscores the richness and ripeness of the grapes grown on the slopes of the Marne Valley, particularly in the village of Damery.
Noir Coteaux is based on the marriage of wines of the year and a perpetual reserve, one-third of which began in 2000. This balancing act allows the cuvée to evolve on the edge, between the richness and density of the perpetual and the youthfulness of the base year. Malolactic fermentation is not carried out in order to preserve the wine's great tension.
After bottling, the wine rests in the house cellars for 36 months. A dosage of 8g/L (Brut) adds generosity.
Cuvée Noir Coteaux Goutorbe Bouillot is deep gold in color, with fine bubbles.
The nose offers aromas of white fruits, which then evolve into a more pastry-like, brioche-like touch.
The palate is full-bodied, beginning with a round attack and gently stretching to a saline finish that also evokes citrus fruit.
A lovely gastronomic wine, which will go well with white meat or a cheese platter.
