The Rosé de Saignée in magnum is a cuvée made exclusively from Pinot Noir, sourced from the calcareous soils of the Jurassic Kimmeridgian located in Urville, in the Aube region. These calcareous terroirs give the wine a unique intensity, expressed through brilliant aromas and a firm structure.
This cuvée is made using the Saignée technique, which involves a 3-day maceration to capture the aromas of red fruits and the vivid color of Pinot Noir. Part of the cuvée is aged in oak barrels, adding a layer of complexity to the whole. Malolactic fermentation, performed to bring roundness, and the low dosage of 4 g/L highlight the purity and natural character of this cuvée. This champagne is lightly sulfited, enhancing its freshness and authenticity.
