Charles Doyard's last creation before his untimely death, this cuvée embodies the exacting standards, precision and elegance that define the House's style.
Cuvée Monts Ferrés 2016 is a Blanc de Blancs. The vineyard benefits from a typical chalky soil, giving the wine a chiseled minerality and remarkable tension. The "Monts Ferrés" parcel reveals all its singularity here, thanks to an artisanal approach that respects the terroir.
Vinification is carried out entirely in Burgundy oak barrels that have been used for at least five years, for a pure expression with no marked woody imprint. No malolactic fermentation takes place, preserving the natural freshness of Chardonnay. After bottling, the wine is aged for 6 years on its lees in bottle, before being disgorged in July 2023.
Dosage is minimal, at just 0.6 g/L (Extra Brut), underscoring the wine's purity and verticality.
The color of Monts Ferrés 2016 is a luminous light yellow with green highlights, heralding great vitality.
The nose offers superb aromatic intensity, with notes of crisp nashi pear, mirabelle plum,candied citrus fruit and an elegant hint of buttery pastry and honey. Mineral nuances of oyster shell and roots complete this complex bouquet.
On the palate, this champagne has a broad, precise attack, supported by vibrant acidity and ultra-fine mousse. The structure is ample, saline and mineral, offering a long, persistent finish of purity and energy.
