The first plenitude corresponds to the wine's first life, the second is the time of energy: after at least twelve years of maturation on the lees, the wine's intensity is magnified. It was from this observation that P2, the new Dom Pérignon appellation, was born.
This Vintage 2000 P2 has a second life 10 years after its first release in 2007. The wine is magnified, its energy multiplied tenfold. The momentum of the transformation is palpable, a promise to go even further.
The year 2000 was marked by alternating cold and rainy spells, followed by hot and stormy weather.Summer was uncertain and long dreary. The weather miraculously improved in the last days of August. It is this favorable period - without interruption until the end of the harvest - that makes the vintage. The harvest begins with the Pinot Noir on September 11th.
This Vintage 2000 P2 Dom Pérignon has a ripe, invigorating and generous nose. Warm notes of harvest and brioche combine with bergamot and stone fruit.
On the palate, this cuvée is vibrant, the attack asserting itself directly, prelude to a richness that is more tactile than fleshy, and which only gradually reveals itself. Racy, the viscosity is restrained and simply follows the contours of the wine. The lingering finish is exquisitely bitter and sappy, mingling licorice and toasted malt.
