Fleur de Passion is a vintage champagne emblematic of the house of Diebolt-Vallois, which is only made in exceptional years.
It is a Blanc de Blancs champagne made exclusively from grapes grown on 7 or 8 parcels of old vines on the hillsides known as « Les Buzons » in the Grand Cru classified vineyards of Cramant.
Many of these vines are over 60 years old with extremely low yields, but which give unique aromas to the grapes.
The earth here is composed of a fine layer of soil on a rockbed of chalk, which gives its notes of minerality to Fleur de Passion.
It’s a champagne made in small burgundy barrels, in the old-fashioned way, with great care to preserve the expression of this terroir.
This is a champagne for aficionados. It’s the origin of the grapes which makes all the difference ; at Cramant our vines are between 45 and 60 years old and grow on the finest hillsides. The wine is matured in small 225 liter barrels and we make around 10 000 bottles a year. It began as an experiment in 1993 when I thought I’d have a little fun by putting some of the wines from the best parcels into the barrels that I used for the Prestige (which also has a part of oak aged wines). I made 9 barrels just to see. On tasting, the result was so conclusive that I decided to create a whole new cuvee: Fleur de Passion. It’s a very individual champagne, of great vivacity, extraordinary complexity and rare power, which can be laid down for many years. It’s one of the greatest cuvees around. We choose to make it only in the best of years, so it was not produced in 2001, 2003 or 2009.
Tasting

Its fine and elegant nose encompasses herbaceous notes, toasted bread and white flowers, with more fruity and spicy (vanilla) aromas gradually revealing themselves.
In the mouth it is amazingly powerful and vinous, complex and elegant at the same time, and absolutely perfectly balanced. Barrel ageing adds light, perfectly integrated oaky notes. The Diebolt-Vallois Fleur de Passion is a grand champagne which will continue to evolve over many years.
Best served at a temperature of 10°C.
