The making of Bruno Paillard N.P.U. 2009 champagne

The N.P.U. 2009 champagne is born from a blend of 50% Chardonnay and 50% Pinot Noir, sourced exclusively from six Grand Cru vineyards among the most prestigious in Champagne: Oger, Le Mesnil-sur-Oger, Chouilly, Verzenay, Mailly-Champagne, and Bouzy.

The vinification follows a rigorous approach:

  • Fermentation in small old oak barrels for 10 months, providing a complex structure and a subtle woody patina.
  • Aging on lees for over 12 years at a constant temperature of 10.5°C.
  • Disgorgement in November 2022, followed by an additional 18 months of rest before release.

This long process enhances the aromatic richness and depth of the wine while maintaining a beautiful tension. With a dosage of 4.5 g/L, this Extra Brut champagne expresses the purity of the vintage.

The 2009 vintage

The 2009 vintage in Champagne was marked by a hot and dry summer, allowing for gradual and balanced ripening of the grapes. Thanks to the water reserves accumulated in the spring, the grapes reached perfect maturity while retaining refreshing acidity. This vintage stands out for its depth, salinity, and aromatic brilliance.

    The color is distinguished by a liquid gold hue, dense and luminous, with brilliant reflections. Its effervescence is fine and regular.

  • Nose

    An intense and evolving bouquet: notes of morello cherry, candied citrus, and white flowers (mock orange, jasmine), which then open up to aromas of calisson, nutmeg, and fresh ginger. The final touch evokes sandalwood and peppermint.

  • Palate

    A serene and ample attack, revealing a precise and elegant structure. The persistent salinity interacts with the fleshy texture of the fruit, offering a finish of remarkable length, vibrant and harmonious.
