Blanc de Noirs Grand Cru makes its grand entrance into the Bruno Paillard range! This new creation was born of the desire to combine the diversity of vintages to offer a rich, precise expression of Pinot Noir from the northern crus of Champagne.
This cuvée is made exclusively from the first pressings of Pinot Noir from four Grands Crus: Verzenay, Mailly, Verzy and Bouzy. Three of these offer a predominantly northerly orientation. These historic chalk terroirs combine the elegance and distinctive depth of Pinot Noir.
Vinification takes place mainly in stainless steel vats, but a touch of wood (15-20% depending on the year) enriches the blend. Aging on the lees lasts 3 years, and after disgorging, Blanc de Noirs Grand Cru rests in the cellar for at least another 6 months. Like all Bruno Paillard Champagnes, this is an Extra-Brut, with a dosage of 3g/L.
This champagne has a brilliant gold color with coppery highlights, and its effervescence is fine and active.
The nose is lively and velvety, with aromas of red rose petals, cherries, pink grapefruit and Timut pepper. Aeration reveals both a bouquet of sweet spices and a sensation of great freshness.
On the palate, the chiseled, chalky texture of the nose is again evident. The attack is gripping and salivating, with salinity and delicate fruit intertwined in an umami that beckons the palate. The wine's depth gradually emerges, around notes of cherry flesh, kumquat and quince.
This Blanc de Noirs from Maison Bruno Paillard will be the ideal aperitif companion for grilled shrimp or pata negra, but will also find its place on the table with poultry, game birds or finely smoked fish such as sea bass or red mullet.
