Everything, that is, with the exception of two Bollinger parcels classified as Grand Cru: Les Chaudes Terres and Clos St Jacques, in Aÿ. These two plots are cultivated the old-fashioned way, in crowds, using the provignage method, worked by hand and sometimes even with the help of a draught horse. Bollinger Vieilles Vignes Françaises is a symbol, the bearer of a memory that has almost disappeared: an extraordinary, moving heritage.

This 2006 vintage was produced in 3300 numbered bottles, harvested on September 14, 2006, then aged in our cellars.
This non-dosed Blanc de Noirs Grand Cru reveals elegant ripeness and generous expression. To the eye, a deep golden color evoking the light of an autumn morning.
The nose reveals intense notes of honey and gingerbread; candied citrus, quince, dried exotic fruits (mango, papaya) and ginger.
The palate is both dense and subtle, with spicy notes reminiscent of ginger, pepper and vanilla bean. A great wine that surprises with its remarkable balance and consistency on the palate.
Bollinger's Cuvée Vieilles Vignes Françaises 2006 can be paired with the rarest of dishes, but stands on its own to create exceptional drinking occasions; among enthusiasts, it should be enjoyed with solemnity.Served between 8 and 10°, it can be enjoyed now with white caviar and Alba truffles, or left to age in the cellar.
