This 2012 vintage is a 100% Grand Cru Pinot Noir, whose grapes were harvested on September 13, 2012. Fermentation takes place entirely in barrels, after which the bottles are matured in the cellar. This exceptional cuvée has been produced in 2193 numbered bottles,
To the eye, the wine is an intense golden yellow.
On the nose, a rich, complex palette of roasted aromas is combined with ginger, almonds and hazelnuts. Notes of candied pear, cooked apricots and subtle hints of dark chocolate complete the palette. After opening, gingerbread rounds off this gourmet nose.
On the palate, the attack is round and powerful. The mid-palate reveals white-fleshed and yellow fruits, complemented by toasty aromas. Candied lemon zest and ginger add freshness to this generous ensemble. The tasting ends on a long, smooth finish.
Bollinger's Cuvée Vieilles Vignes Françaises 2012 can be paired with the rarest of dishes, but stands on its own to create exceptional drinking occasions; among enthusiasts, it should be enjoyed with solemnity.Served between 10 and 12°, it can be enjoyed now, or left to age in the cellar.
