      Description

      Cuvée Louis Salmon 2009 was created as a tribute to Elisabeth Salmon's brother Louis, a passionate oenologist who was involved in wine-making right from the founding of Maison Billecart-Salmon. This vintage Blanc de Blancs is marked by great purity and minerality.

      This grand Blanc de Blancs 2009 is made from Chardonnay grapes from Côte des Blancs Grands Crus, Cramant (58%) and Chouilly (21%) for finesse, and Le Mesnil-sur-Oger (21%) for structure and longevity.

      This cuvée is vinified entirely in stainless steel vats, and has benefited from 12 years' maturation on lees in the House cellars. This prolonged aging is designed to develop the wine's aromatic richness to the full. The dosage is 3.75 g/L.

      Pale gold in color, with light yellow and green highlights. The effervescence is persistent and sparkling.

      The elegant nose reveals a complex, nutty patina with notes of pear in syrup, tangerine, yuzu, fresh honey and raw butter.

      The palate is tactile, creamy and chiseled, with flavors of marzipan, flaky brioche, white fruit and white pepper. The slender finish is incredibly long-lasting, with cardamom, fresh mango and caviar lemon.

      This Louis Salmon 2009 cuvée from Maison Billecart-Salmon will express its full potential when served at a temperature of between 10° and 12°, and will go wonderfully well with Brittany abalone and salicornia.
