      Description

      Cuvée Louis Salmon 2007 was created as a tribute to Elisabeth Salmon's brother Louis, a passionate oenologist who was involved in wine-making right from the founding of Maison Billecart-Salmon. This vintage Blanc de Blancs is marked by great purity and minerality.

      This grand Blanc de Blancs 2007 is made from Chardonnay grapes from three Côte des Blancs Grands Crus: Chouilly, Cramant and Mesnil-sur-Oger. These terroirs are renowned for the finesse and purity of their grapes.

      This cuvée is vinified and aged in equal proportions in vats and barrels, and has benefited from 10 years' maturation on lees in the company's own cellars. This prolonged aging is designed to develop the wine's aromatic richness to the full. The dosage is 7 g/L.

      The wine has a golden yellow color with a crystalline appearance, and its effervescence is luminous and sparkling.

      The elegant nose reveals mineral, floral and fruity complexity, with scents of bergamot, white flowers and fresh pineapple. Its aromatic profile gives this champagne a chalky character of great purity.

      On the palate, the creamy, tactile texture is of great finesse, and its beautiful, refreshing balance invades the palate with natural flavors of citrus zest, vine peach and white pepper. The lingering finish is remarkably long.

      This wine expresses its full potential when served at a temperature between 11° and 12°, and is a perfect match for whole Corrèze veal sweetbreads in a casserole or a creamy shellfish risotto.
