Nicolas Maillart's Les Chaillots Gillis 2011 is a very limited production cuvée, reserved for interesting vintages. Naturally well-balanced, it has a very low dosage of around 2 g/l.
Made exclusively from Chardonnay, it is vinified in oak barrels, then aged for six months with stirring of the lees.
This cuvée has a deep yellow color with fine bubbles.
On the nose, the first notes are woody, followed by candied citrus.
On the palate, the wine is fresh and complex, with a slightly licorice finish.
This champagne is the perfect accompaniment to a scallop salad with exotic fruits.
