Description

Quinte Essence 2005 Extra Brut is a precision champagne. It's a cuvée with great tension and freshness. It's creamy, intense and fruity.

This cuvée is a blend of 2/3 Pinot Meunier and 1/3 Chardonnay.

Quinte-Essence 2005 is vinified in stainless steel tanks, with natural fermentation and spontaneous malolactic fermentation, with no fining, filtration or chilling.

From 2006 onwards, vinification at the domaine changed, and Franck and Isabelle Pascal found what they needed to magnify their natural vinification, thanks to Isabelle's health. Indeed, that year, Isabelle refused chemotherapy to expel Hodgkin's disease from her body and turned to what spoke to her: energy therapies. Within 5 weeks, almost all her blood test results were back to green! This did not leave them indifferent, and Pascal and Isabelle decided to train with the person who had taught the therapist.

This enabled them to understand that biodynamics uses energetic preparations that resonate with living organisms. It's a bit like homeopathy: the homeopathic granule contains information. The body picks up this information and there is a biological response.

Biodynamics transmits information from dynamized preparations to soil fungi, micro-organisms, plants, etc. Their functioning changes, giving the grapes a different potential! It's this potential that Franck Pascal Champagnes wants to bring to the consumer. But biodynamic viticulture stops at the vine...

And between the vine and the consumer, there's the winemaking process. We have created information to guide the indigenous yeasts, spontaneous bacteria and enzymes that make wine. Informed" vinification produces wines that are straightforward, clean, pure, precise, fine, elegant and taut, with fresh fruit and minerality. Natural winemaking is back on the map!


Presentation of Franck Pascal

Quinte-Essence is our gastronomic cuvée. We select wines with great ageing potential, complexity, structure, length on the palate and a minerality that links the dish and the wine.
Since 2005, the entire estate has been cultivated biodynamically, under the guidance of François and Jacqueline Bouchet.
Natural vinification, tested since 2001, became the norm this year, with no chilling or filtration. Malo is spontaneous. Just a little sulfite to encourage fruit expression.
