This wine contains mostly organic and some biodynamic grapes (2/3 of the vineyard has been biodynamic since 2002, not certified in 2004).
This wine was vinified in stainless steel tanks. Partly with natural yeasts, partly with selected yeasts. Spontaneous malo. The wine was chilled and filtered.
2004 is the third year in which one of our plots has been cultivated using 3 different methods to compare the impact of integrated, organic and biodynamic viticulture. This enabled us to see on our terroirs that the biodynamic grapes gained in structure and minerality, that the tannins in the skins were palpable, that the aromas gained in finesse and elegance through the appearance of tension, and that the taste of the grapes gained in length on the palate and aromatic persistence. I wanted to produce wines from the Marne Valley made from Pinot Meunier with finesse, elegance, precision, straightforwardness, purity, minerality and a long finish. That's why we've recruited the last tier of biodynamic vineyard workers.
Quinte-Essence is our gastronomic cuvée. We select wines with great ageing potential, with complexity, structure, length on the palate and a minerality that links the dish and the wine.
