All the expertise of the House, the creativity and avant-gardism of its Chef de Cave Dominique Demarville, are brought to the fore in the making of this exceptional wine.
Dosed at 3g/L, Extra Brut Extra Old expresses its maturity with purity. Its double ageing of 3 to 27 years before blending, and 6 years after blending the reserve wines, marks its complex, refined identity in the most beautiful of ways.
Intensely golden, its bubbles are very fine, with a pressure of only 4.5 bar instead of the usual 6 bar. The nose is full-bodied and dense, with ripe fruit and candied citrus fragrances. Deep and silky on the palate, its freshness and minerality lead to a long, saline finish.
With an ageing potential of 10 to 15 years, this subtle, full-bodied cuvée can be enjoyed with white meat or noble fish.
