A cool year full of contrasts, marked by a particularly cold winter with severe frosts, followed by a cool, dry spring and early summer. August and September saw a sudden reversal of this trend, with very wet and humid weather complicating the ripening of the grapes towards the end of the year. Only the few southern exposures or those with very little grape load reached satisfactory ripeness. 2010 is a vintage of contrasts, between the fragility of the Pinots, sorted with extreme rigor, and the triumph of some of the great Chardonnays of the Côte des Blancs! Cuvée Blanc de Blancs 2010 is bottled at low pressure for a rounder, fuller effervescence. It benefits from an average of 5 years' maturation in our cellars, plus 6 months' rest after disgorging to perfect its maturity. The dosage is 9 g/l. The effervescence is subtle and mellow, with a golden color and slightly green highlights. Intense bouquet of yellow fruit (mirabelle plum, tart mango), candied lemon, flowers (mimosa) and pastries. Light agitation reveals notes of sugared almonds (almond powder), lightly vanilla-flavored white chocolate and baked apple. One expects a continuation of the substance and volume, but this is not the case. In fact, the opposite is true: the wave recedes, revealing the precision, purity and chalky, mineral freshness of Avize's great Chardonnays.
