Cuvée Pie Danse comes from a plot planted in 1981 on 41B rootstock. The mid-slope terroir is composed of brown limestone over heavy clay, giving this Pinot Noir concentration and tension.
The vineyard is cultivated according to the principles oforganic farming, without chemical fertilizers or synthetic products. This respectful approach to soil and plant allows the full identity of the terroir to be revealed.
The grapes were harvested at 10.5° in September 2021. Vinification is carried out naturally:
The wine is then aged for 24 months on laths before disgorging. The liqueur d'expédition is dosed at 1 g/L and prepared by hand ("minute"), for a pure expression of fruit and terroir.
Cuvée Pie Danse is a luminous, pale golden yellow with fine, regular bubbles.
The nose reveals precise aromas of crisp red fruits, white pepper and beeswax, enhanced by a delicate mineral touch.
On the palate, this champagne offers a lively, direct attack, with a straight, taut texture. The slightly saline finish evokes gunflint and candied citrus.
The price of a bottle of Maxence Janisson's Pie Danse champagne is 46,95 €. This natural, confidential wine is aimed at lovers of lively, committed champagnes.
