From pressing of the grapes, and blending, right up to the final bottling, every operation is strictly controlled.
The vats in which the wine is made are carefully sealed by the Shomrim at the end of each operation and the seal is only broken when the next stage of the winemaking is undertaken by the Shomrim.
All utensils and material are made kosher by a passage in boiling water, to eliminate all impurities. With dominant Chardonnay characteristics (blend 45% Chardonnay , 40% Pinot Noir and 15% Pinot Meunier), this cuvee presents a delicately complex nose of white fruits and citrus.
With a superbly fresh attack, the supple palate confirms the same lovely fruit characters found on the nose and enjoys a long finish.
