Aurélien Laherte's Les Empreintes cuvée symbolizes the quintessence of the Chavot terroir. It's a vintage champagne that changes with each harvest. The blend is not immutable, but is rebuilt each year according to its unique climate and aromas.
Les Empreintes 2014 Laherte Les Empreintes is based on a blend of 50% Chardonnay, including 1/3 Muscat Chardonnay from a parcel called Les Chemins d'Epernay. This is a shallow, clayey parcel resting on a chalky layer. The other half of the blend is based on Pinots Noirs from the locality known as Les Rouges Maisons. A parcel of rich, damp soil studded with fragments of flint.
This cuvée is vinified in barrels aged from 3 to 10 years, before spending several years in the house cellars where its aromas will develop and refine. This cuvée is measured in Extra Brut. A cuvée that will reveal its full potential as a refined aperitif.
