To preserve the distinct identity of its cuvées over the years, the Jacquesson champagne house produces a new Cuvée 7XX every year.
Each new iteration of Cuvée 7XX retains the house style, but adapts it to the year's harvest.
For example, the 2013 harvest gave birth to the balanced, light Cuvée 741, characterized by its power and finesse.
Cuvée 741 is a snapshot of the Jacquesson vineyards (terroirs of Aÿ, Dizy, Hautvillers, Avize and Oiry). It's a blend of half Chardonnay and half Pinot (2/3 Pinot Noir and 1/3 Pinot Meunier). The percentages may vary from year to year, depending on the yields of each grape variety. The champagne is vinified in old foudres and some demi-muids, with periods of batonnage. Malolactic fermentation is carried out, and the dosage is Extra Brut (1.5g/l).
Cuvée 741 Jacquesson has a nose of powerful, gourmand notes. The palate is lively, taut and mineral. The 2013 harvest began relatively late, yielding grapes combining sweetness and freshness.
