Jacquesson's Cuvée 734 Dégorgement Tardif is a new interpretation of this cuvée.
In contrast to the non-vintage Brut produced by most champagne houses, whose aim is to have a taste and style of the most perfect regularity, the concept behind Cuvée 700 is to reflect the character of the main year of the blend.
Cuvée 734, for example, is based on the 2006 harvest. It was a year marked by a cold, snowy winter, followed by a mild spring that gave way to a very hot early summer, which ended, however, with cold and rain. At harvest, the Chardonnays were full of finesse, while the Pinots showed great power and vinosity.
The blend is based on 54% Chardonnay, 20% Pinot Noir and 26% Pinot Meunier. Reserve wines account for just over a quarter of this blend (27%).
All cuvées 700 are made from grapes from 3 Grands Crus and 2 Premiers Crus, and only the first press juices, vinified in foudres, are used.
Cuvée 734 Dégorgement Tardif Jacquesson was aged for 7 years on lees, before being disgorged in October 2014. 15,435 bottles were produced, and 757 magnums.
