On the palate, straightforward and unfailingly taut, saline and even iodized notes take over from a complexity of aromas including Passe-Crassane pear, yellow grapefruit and Yuzu lemon. The purity and fresh aromas of this wine make it a subtle companion today, for which patience after disgorging will reveal all its complexity and gourmandise.
As an aperitif, it's a gourmet palate builder that will magnify dishes with unusual pairings such as Aveyron lamb with artichokes, fir bud calyx and Tonka bean, or Brie de Meaux with bourbon vanilla.
