      Pierre Gimonnet's Cuvée Oenophile 2012 is a champagne that will delight aesthetes. It's a cuvée whose elaboration underscores the grandeur and complexity of the Grands Chardonnays of the Côte des Blancs.

      This non-dosed cuvée was created in 1985, long before Champagne Nature became fashionable. Only the very best vintages are chosen for this cuvée. The promising 2012 follows on from the 2008, 2005, 2004, 2002, 2000, 1999, 1998, 1995, 1993, 1990, 1988 and 1985 vintages.

      This Blanc de Blancs cuvée is a blend of 40% Chardonnay from Cramant Grand Cru (only from the "cœur de terroir": Buissons, Gros Monts, Fond du Bateau, Hautes Bauves, Bionnes, la Croix, Champ du Prévot....), 38.5% from Chouilly Grand Cru (35.5% Montaigu, 3% Ronds Buissons), 7.5% from Oger Grand Cru (Champs Nérons , Terres de Noël), and finally 14% from Cuis 1er Cru ("Basses vignes" and "Roualles"). This is a blend with a high proportion of Grands Crus, strongly marked by the house's two favorite terroirs: Cramant and Chouilly. Never before have these two villages been in such high proportion in a classic vintage blend.

      Cuvée Oenophile 2012 Gimonnet was vinified in stainless steel tanks to ensure maximum purity. Malolactic fermentation was carried out. Only 15,750 bottles were produced.

      This is a champagne with a beautiful golden color and slightly green highlights. Its bubbles are very fine and lively.

      The nose reveals notes typical of the great blanc de blancs: floral, with a touch of citrus, and on the second nose, aromas of sweet spices and crème pâtissière.

      On the palate, this is a straightforward, lively cuvée that displays both intensity and complexity. A perfect match for seafood or as an aperitif.
