      Description

      Gastronome 2016, produced by Pierre Gimonnet & Fils, is a cuvée specially designed for Michelin-starred restaurants. It's a champagne produced in "petite mousse", i.e. with a particularly fine effervescence, so as not to disturb the palate or taste buds before a gastronomic meal.

      Gastronome 2016 is a Blanc de Blancs champagne focused on freshness and liveliness. This cuvée is a blend of Chardonnay from terroirs classified Grand Cru (70%) and Premier Cru (30%) in the Côte des Blancs. Grapes from Cramant (43.5%) add roundness to the wine, those from Chouilly (24.5%) add fruitiness and elegance, those from Oger (2%) add a touch of spice, and Chardonnays from the Cuis terroir (30%) add freshness and vivacity, the cuvée's signature.

      This cuvée is vinified and aged in stainless steel tanks to preserve the purity of the terroir, and malolactic fermentation is carried out to add a touch of roundness. The bottles are aged for 3 years in the company's own cellars, and the wine is blended at 5 g/L to preserve a wine that is characteristic of the Gimonnet style: balanced, fresh and elegant.

      Cuvée Gastronome 2016 has a pale yellow color and very fine bubbles.

      The nose is elegant and fresh, with notes of citrus, lemon, apple, pear and white flowers. Warmer notes of brioche, toast, almond and hazelnut complete the bouquet.

      On the palate, this is a cuvée with a lovely, lively, straightforward attack and beautiful minerality. This 2016 Gastronome champagne awakens the taste buds before the table!
