Francis Boulard's Cuvée Petraea I is a champagne made using a technique similar to the solera. It's a perpetual reserve, from which 50% of the volume is removed for bottling and replaced by wines from the last harvest. In this way, the wine is made up of all the previous vintages, in decreasing proportion.
This cuvee is elaborated in an extremely confidential way, we are forced to limit its sale to 2 copies per customer every 30 days.

Francis Boulard's Cuvée Petraea I is a champagne made using a technique similar to the solera. Francis Boulard already had a Petraea cuvée, but in order for it to be certified organic like the rest of the range, Francis Boulard and his daughter Delphine decided to start a new perpetual reserve in 2012. Cuvée Petraea I is the first edition of the organic version of this perpetual reserve.
This cuvée is made from Pinot Noir grapes from the Massif de Saint Thierry. Vinification takes place on fine lees in 25-hl oak tuns. Malolactic fermentation is not blocked.
Petraea I Francis Boulard et Fille has a deep gold color. The nose is intense and expressive, evoking notes of ripe yellow fruit and spices. On the palate, it's full-bodied, generous and powerful, yet retains a lovely tension.
