Cuvée Boléro Extra Brut 2006 from Maison Fleury is an unprecedented champagne that needs time to reveal its full complexity. It's a champagne that combines finesse, smoothness and freshness, with aromatic notes of vanilla, citrus and a hint of salt.
Maison Fleury is the forerunner of biodynamic viticulture in Champagne, and began its conversion to organic viticulture as early as 1970, long before it became fashionable. Today, Fleury is certified Agriculture Biologique (AB) and Demeter for its entire 15-hectare estate.
Cuvée Boléro is a Blanc de Noirs champagne, made exclusively from Pinot Noir grapes. The House of Fleury has put all its expertise into creating this cuvée. Half of the wine is vinified in enamelled vats, to preserve freshness and liveliness, while the other half is vinified in oak barrels, to give the wine a certain roundness and fruity, spicy aromas.
Cuvée Boléro is then aged under cork, allowing the wine to benefit from micro-oxygenation and develop magnificent aromatic complexity. Finally, this cuvée is dosed very lightly, at 2.6g/l, to allow the work of the vine and the wine to express themselves.
Like Maurice Ravel's work from which it draws its inspiration, this cuvée needs time to fully express itself. We recommend opening the bottle 30 minutes before tasting, or decanting for a few moments.
Tasting
By Patrick BorrasCuvée Boléro Extra Brut 2006 is a yellow champagne with golden highlights. Its bubbles are fine and regular, with a beautiful intensity.
The nose is surprisingly fruity, with notes of ripe fruit, white flowers (lime blossom) and honey. The nose of Cuvée Boléro Extra Brut 2006 is punctuated by fresher, slightly saline aromas.
On the palate, the attack is rich, unctuous and powerful. The palate is beautifully vinous, punctuated by very fresh notes that give it great balance. On the palate, aromas of honey and very ripe fruit echo those discovered on the nose.
This is a very pretty champagne, which will accompany a meal without a moment's hesitation. I recommend serving the Cuvée Boléro by Maison Fleury at a temperature close to 9°C.
