The Making of the Champagne Trop M’en Faut! Drappier

The Trop M’en Faut! cuvée is composed of 100% Fromenteau – the Champagne name for Pinot Gris, once very present in the Aube. This copper-skinned grape variety produces a golden juice with yellow fruit nuances, and Drappier showcases it in this exceptional cuvée. After an experimental phase in 2015, this cuvée is the result of a blend of the 2019 and 2020 harvests, grown on the Kimmeridgian limestone soil of Urville, in the Aube. The vineyard, cultivated using organic farming and plowed by horse, benefits from the minerality of this terroir while revealing an almost exotic roundness characteristic of Fromenteau.

Aged in 600L local oak demi-muids for 8 months, this cuvée benefits from natural techniques without chaptalization, filtration, or clarification, to preserve the purity of the aromas. The malolactic fermentation occurs naturally, with little added sulfur. Aged 3 years on the lees, this Brut is not dosed, offering an authentic expression of Fromenteau and its Champagne terroir.
