The name Perpétuité refers to the interminable winemaking process, and also echoes the history of the Abbaye de Clairvaux, which was transformed into a prison during Napoleon's reign, and whose outbuildings are the cellars of the Drappier house.

      Description

      This coteau champenois Perpétuité has been vinified as a perpetual reserve, (adding the year's wine to a barrel filled with previous years' wine). The name Perpétuité refers to the interminable winemaking process, and also echoes the history of the Abbaye de Clairvaux, which was transformed into a prison during Napoleon's reign, and whose outbuildings are the cellars of the Drappier house.

      This Champagne hillside is planted exclusively with Pinot Noir grapes from Urville, a terroir on the Côte des Bars in Aube.

      The clear wines are kept in 5,000-liter tuns. Maison Drappier's perpetual reserve consists of 5 foudres, which will be eternally filled with each vintage deemed appropriate for it. The Tronçais oaks were selected for their slow life cycle. Indeed, the wood's very tight grain means it can hold wine for decades. This method adds density and texture to the wine, while ageing softens its acidity.

      Cuvée Perpétuité has a brilliant golden color.

      The nose reveals floral notes reminiscent of white Burgundy.

      The first palate is fresh and lively, then evolves into a rich roundness. The finish is based on a gentle bitterness and carried by a lovely minerality.
