The Brut Nature Rosé Les Riceys is made from Pinot Noir from the calcareous terroirs of the commune of Les Riceys, a village in the Aube known for its rosé wines. This unique terroir, exposed to the south on the slopes of the Kimmeridgian, gives the wine a pronounced minerality and intense aromas.
The winemaking method for this champagne involves carbonic maceration in whole clusters for 48 hours, allowing optimal extraction of the color and aromas of the Pinot Noir. 20% of the wines come from a perpetual reserve of rosé, adding additional complexity to the cuvée. After aging for 6 months, divided between stainless steel tanks and oak barrels, the wine is bottled and then taken down to the Drappier cellars for 30 months. This is a cuvée without dosage to preserve its aromatic purity.
