Drappier's Millésime d'Exception 2016 is the memory of a remarkable year. It is a superb, well-balanced champagne, complex and deep.
For this Exceptional Vintage, Drappier uses only the purest juices from the first press. The grapes are processed by gravity, without pumping, to avoid oxidation.
This cuvée is a blend of 60% Pinot Noir, 30% Chardonnay and 10% Pinot Meunier. The grapes come from south-facing limestone plots that once belonged to the monks of Clairvaux, on a mid-slope of Jurassic Kimmeridgian formation.
Alcoholic fermentation takes place over approximately 2 weeks at low temperature, followed by malolactic fermentation, which takes place naturally and completely. The wine is neither filtered nor dosed.
The nose is rich and complex, with notes of citrus, bread, hazelnuts and almonds.
On the palate, a touch of vanilla testifies to the high proportion of Chardonnay, while the depth of Pinot Noir is expressed in aromas of red fruits and violets.
This Exceptional Vintage 2016 by Drappier is ideal as an aperitif, but will also go perfectly with blanquette de veau, risotto, chicken fricassee or sole a la plancha.
