2012 was marked by a historic hailstorm that considerably reduced the harvest, fortunately at the beginning of the season. The remaining grapes developed harmoniously, producing small quantities of a vintage judged to be excellent.
For this exceptional 2012 vintage by Drappier, only first press juice is used.
Alcoholic fermentation takes around 2 weeks at controlled temperatures, and malolactic fermentation is carried out naturally and entirely.
Cuvée Millésime 2012 benefits from an Extra Brut dosage of 5.6 g/L.
The nose is very complex, with notes of white fruit, almond and fresh ginger. The palate is slightly creamy, with good tension and a hint of brioche. A floral touch testifies to the high proportion of Chardonnay, while the depth of Pinot Noir is expressed in the form of red fruit and pretty bitters.
Ideal as an aperitif served at 7°, it would be perfect with grilled sea bass with aniseed and lemon, risotto, sole à la plancha, old-fashioned blanquette de veau, or bleu des Causses.
