The Clarevallis cuvée from Champagne Drappier is a tribute to the purity and authenticity of the terroirs of the Côte des Bar. Inspired by the Cistercian abbey of Clairvaux, this cuvée reveals a beautiful minerality and a balanced structure. An organic cuvée, ideal for accompanying a refined aperitif or a delicate meal.
The Clarevallis cuvée is composed of 75% Pinot Noir, 10% Meunier, 10% Chardonnay, and 5% Blanc Vrai. The grapes come from the Jurassic Kimmeridgian limestone terroir of Urville, in the Côte des Bar. This unique soil brings a fine minerality and great freshness to the wine.
All the grapes are from organic viticulture. These parcels are cultivated in Organic Agriculture, and part of it is plowed by a horse. The production relies solely on juices from the first press of the grapes, the purest and freshest part. Malolactic fermentation is carried out with organic yeasts from the estate. Unfiltered and uncolored, the wine is also extremely low in sulfites, thus preserving all its aromatic integrity. The dosage liqueur, aged 15 years in oak barrels, adds a final touch with a discreet dosage of 4 g/l.
The Clarevallis presents a color of brilliant gray gold, with a very fine and persistent foam. This elegant color recalls the sobriety and purity of the Cistercian spirit.
On the nose, this cuvée reveals floral notes of elderberry and violet, accompanied by a subtle limestone minerality. There is also a touch of fresh fruit, with a slight woody imprint.
On the palate, the attack is frank, with a beautiful tension balanced by a discreet dosage. The structure of the wine is expressed through flavors of beautiful bitters, with a texture rounded by the pinot. The finish is elegant and mineral, revealing a true signature of terroir.

To preserve all the qualities of the Clarevallis Drappier, it is recommended to store it horizontally, at a temperature between 10 and 12°C, away from light. This cuvée has an aging potential of 5 to 7 years, continuing to develop its complexity.
