Description

The cuvee Prestige from Diebolt-Vallois is a Blanc de Blancs made exclusively from grapes from the Grand Cru vineyards of Cramant. A large majority of these grapes come from an east-south-east orientated parcel known as « Les Pimonts » where the earth is made up of a fine layer of soil over a chalk substrata. The cuvee Prestige is the result of blending three different vintages with reserve wines that have been aged for 2 to 3 years in oak casks, bringing a round rich complexity to this cuvee.

Presentation of Jacques Diebolt

The Prestige is a blend of 3 Grand Crus from the Cote des Blancs : Cramant, Chouilly and Le Mesnil/Oger.
Within this blend of crus we find a minimum of three different vintages, the proportions of which can vary in order to obtain the balance, finesse and elegance that we’re looking for.
A certain quantity is matured in oak, which contributes to the overall balance.

Robe

The light yellow robe of the Diebolt-Vallois cuvee Prestige is enhanced by golden highlights and a fine, discreet effervescence.

Nose

It offers rich and complex floral aromas, in a register of white flowers such as lime blossom and hawthorn. On the second nose it is white-fleshed fruits such as white peaches that enrich the olfactory palette.

Palate

The Diebolt-Vallois cuvee Prestige has a rich, silky palate with lightly honeyed floral notes underlined by a superb minerality. Chardonnay expresses itself marvelously in this cuvée Prestige, all at once dense, refined, elegant and superbly balanced.

Service

I recommended serving between 9 and 10°C. The cuvée Prestige from Diebolt-Vallois is one of my favorites.
