De Sousa's Cuvée Umami is a champagne that draws its unique aromas from the heart of the terroir, those of the 5th flavor the Japanese call Umami.
Everyone knows the 4 flavors: acid, bitter, salty and sweet, but there's a 5th flavor that's particularly prominent in Japanese gastronomy: Umami. It's a flavor that evokes sapidity and minerality.
To create Cuvée Umami, Erick De Sousa selected grapes from several climats chosen from the house's terroirs classified as Grand Cru.
The creation of this cuvée was made possible by the decision taken ten years ago to apply biodynamic principles to the estate. This biodynamic approach has increased soil life and contributed greatly to bringing out the Umami flavor.
This champagne leaves a soft, long-lasting sensation on the palate.
It is an Extra Brut Champagne, based on the 2009 vintage.
Its pale gold color is studded with very fine bubbles.
On the nose, it's an intense, gourmand wine, with deep aromas of brioche and stewed fruit.
On the palate, Cuvée Umami is a gourmet champagne, combining acidity, freshness, vivacity and spice. This is surely the best definition of the 5th flavor!
